Personally, I think one of THE best things about summer is eating strawberry shortcake. When the kids were little we went to a local strawberry festival and of course, one of the things I remember most was eating the strawberry shortcake. Wow!
It’s one of the easiest desserts to put together and we especially love it with my Strawberries Lenox recipe.

Making Bisquick shortcake offers several benefits that make it an appealing dessert option. First and foremost, I can’t overstate the convenience factor! The premade mix contains all the necessary dry ingredients, saving you time and effort.

Additionally, it is so versatile! Depending on the season, you can customize shortcakes with various fruits, from strawberries and peaches to blueberries and raspberries. This flexibility allows you to experiment with different flavors and create a unique dessert experience every time.

Lastly, of all the shortcake recipes I’ve ever made, I honestly love these the best. Growing up, we ALWAYS had a box of Bisquick mix in the pantry. Mom used it for pancakes, waffles, and especially strawberry shortcake, so there’s a bit of nostalgia when it comes to this recipe, too.

Bisquick shortcakes are not too dry or moist. They always turn out just the right texture so they don’t become mushy from the whipped cream and juice from the fresh strawberries. And they have the perfect level of sweetness too!

Ingredients for Bisquick™ Shortcakes

Ingredients needed for Bisquick Shortcake

To make Bisquick shortcake, you’ll need a few simple ingredients that are likely already part of your pantry staples. Here’s what you’ll need:

  • 2 1/3 cups of Original Bisquick™ Pancake & Baking Mix
  • 3 tablespoons of granulated sugar
  • ½ cup + 2 tablespoons of milk
  • 3 tablespoons of butter, chilled

Feel free to adjust the quantities of the ingredients to suit your preferences. If you prefer a sweeter shortcake, you can increase the amount of sugar. Likewise, if you like a more buttery flavor, add a little extra melted butter.

Step-by-step instructions for making Shortcake Biscuits

Now that you have all the ingredients ready, it’s time to dive into the step-by-step process of making Bisquick shortcakes.

  1. First, preheat oven to 425°F, and prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, whisk together the Bisquick™ and sugar. I use a grater to grate the chilled butter into the bowl with the dry ingredients. Then add the milk.
    • I’ve had the best results using just under 2/3 cup but over 1/2 cup of milk in my recipe, hence the separation between the milk amounts. 
  3. Mix everything together with a rubber spatula until a soft dough forms. You should still see small chunks of butter in the dough. The butter helps create deliciously flaky biscuits.
  4. For a uniform shape, evenly divide the dough into six biscuits using a large cookie scoop (about three tablespoons). Place them onto the prepared baking sheet. If you don’t have a cookie scoop, you can drop spoonfuls of dough onto the baking sheet. If there is more dough remaining after making the 6 biscuits, evenly distribute the rest among them
  5. Bake for about 12 minutes until lightly golden brown. Allow to cool completely before slicing in half horizontally to use in shortcake.

While making shortcake is pretty straightforward, a few tips can help you get the best results every time:

  • Use cold ingredients: Make sure your milk and butter are cold when you mix them into the dough. Cold ingredients help create a fluffier texture.
  • Don’t overmix the dough: Mix the ingredients until they are just combined. Overmixing can result in a tougher texture.
  • Customize the flavors: Add vanilla extract or almond extract to play around with the flavors of the dough.

Once you add any fillings or topping, they are best served within 24 hours, so I’d recommend storing those separately and assembling them just before serving.
